Alysse Dalessandro loves WaterCourse Foods

On my recent trip to the Mile High, I was curious to see what the city had to offer for my vegetarian appetite. I decided to drag my carnivorous friends with me to WaterCourse Foods in Denver and even they found something to love on the 100 percent vegetarian menu.
They serve breakfast all day long and offer a variety of “scrambles” made from cage-free eggs or tofu. The Barcelona scramble has green chiles, roma tomatoes, roasted garlic, and gorgonzola. The sandwiches are served for lunch and dinner. The Buffalo Tofu gives the heat and crispiness common to buffalo wings but without the bone or the meat. WaterCourse Foods takes favorite Italian, Thai, American, and Greek dishes and makes them veg-friendly.
The food isn’t the only good thing about this restaurant. They are commited to the environment and they show it by recycling their frier oil into biodiesel and give a 10 percent discount to bike riders. I was more than impressed with this Denver spot: an environmentally conscious business serving up tasty vegetarian food.
